Ingredients for frozen dessert with ricotta and almonds
For the dessert:
- 250g Ricocrem ricotta cream
- 10g ground almonds
- 500g fresh cream
For caramel sauce :
- 150g sugar
- 2 tablespoons of water
- 100ml fresh cream.
Preparation of frozen dessert with ricotta and almonds
Whip the fresh cream, add the ricotta cream and ground almonds; place in individual dishes in the freezer for a few hours. Prepare the caramel sauce by putting the sugar and two tablespoons of water in a pot. Cook on a fast flame stirring continuously with a wooden spoon. As soon as the sugar begins to crystallize, lower the flame and continue to mix until the sugar is perfectly caramelized. Warm the cream in a small pot and add it to the caramel. Trace a “spider’s web” on a plate and place the dessert dressed with almonds in the centre.
